Bleu des Basques: rom the Pyrenees, a blue cheese with light brown natural rind.
Maturing time: at least 3 months.
In contrast to the Roquefort the penicillium develops without holes in the paste. The flavour is full-bodied and fruity and at the same time slightly piquant, due to the noble mould. Pasteurised Ewe's Milk. 200g - La Bouyguette A fresh cheese from the Tarn, in the Occitanie region in France, made with raw whole goat’s milk. It is decorated with a sprig of rosemary that recalls the area’s local fl ora, which gives the cheese a wonderful scent. It melts in your mouth, has a mild goat’s milk fl avour and spreads easily. Bouyguette is a unique cheese with a distinctive elongated shape, called a “navette”. Unpasteurised Goat's Milk. Approx 140g
- Morbier: MORBIER AOP Produced exclusively in the Jura Massif using raw milk from cows of the Montbéliarde breed. Invented in the 19th century, Morbier was once produced in two stages: The first production, from the morning milking, was covered with a layer of ash to preserve it until in the second step, the other half of the cheese was produced from the milk from the evening milking. The paste is pliable and creamy-full-bodied, with few holes. Meltingly soft cheese, with authentic flavor and milky notes, as well as aromas of caramel, vanilla and fruit. The more ripe, the more it develops roasted aromas, as well as savory, herbal notes. Unpasteurised Cow's Milk. 200g
- Vacherousse d'Argental: Smooth and creamy cheese made from cow’s milk. The rind of the cheese
is fi rst washed with salt water, and then during the 2 weeks of maturation, the white mould rind develops. The paste is very creamy and unfolds delicate aromas. Pasteurised Cow's Milk. 200g
