Le Gruyère AOP Réserve

A hard Swiss cheese with a washed rind, made from raw milk. Its origins go back at least to 1115, around the village of Gruyère in the canton of Fribourg. At least 400 litres of fresh milk go into each 35kg wheel, from cows fed on natural pasture in summer and hay in winter.

Tasting notes

Its rind darkens with time as it ripens. As a Réserve, it's matured longer for a deeper, more complex sweet, nutty and savoury flavour.

How to enjoy it

A fondue essential, and a star on any board with a Swiss white.

For an after-dinner cheeseboard, allow around 100–150g of cheese per person in total, divided between your chosen cheeses. For cheese as the main event, allow around 200–250g per person.

Choose three to five cheeses for a mix of textures, milk types and flavours.
