El Diablo, produced at the Vega Mancha farm, is a ewe’s cheese containing Mojo Picon. This sauce, which is also called “Red Mojo” or “Mojo Bravo”, is traditionally used in many local dishes on the archipelago, such as sautéed potatoes or grilled corn.
