Chaumes - French Washed-Rind Cheese
A soft, washed-rind cow's milk cheese from the Périgord in south-west France. Its golden-orange rind surrounds a pale, supple interior. The aroma is robust but the flavour is gentle and approachable, making it an excellent introduction to washed-rind cheeses. Created in the early 1970s, its name refers to the golden stubble left in the fields after harvest.
Tasting notes
Rich, creamy and buttery, with mellow nutty flavours and a gentle savoury depth. Smooth, springy and yielding, softening as it ripens, with an earthy complexity from the rind and a rounded, lingering finish.
