Pave de Paris


The pavé is an iconic symbol of the history of Paris. Synonymous with revolution, it today embodies an agroecological revolution. This cheese, resulting from a unique expertise, is a soft cheese made from whole cow and goat milk, produced on the farm using traditional methods. This unique cow and goat pavé with an ashed crust reveals a dense paste with a yellow color marbled with white. Both flexible and delicate, its flavors are frank and mineral on the crust, giving way to fruity notes at its heart. Its optimal aging takes about 2 months, but some will easily savor it well beyond that.
