This cheese, made from a mixture of cow and goat milk, will blow away all blue cheese’s fans. With its aging time of 20 days in real mountain caves, wrapped in the leaves of a sycamore tree, we can say that its aging is as special as its taste. Strong, slightly spicy and buttery on the palate, very aromatic, the Valdeón cheese is recommended to be used spread on toasts for example, and is also perfect for preparing any kind of blue cheese sauce.
